1) Responsible for matching the ingredients of all kinds of dishes and engraving to ensure the basic ingredients of the dishes and guarantee the quality of the products. 负责切配各式菜肴及刻花保证菜品基础原料的标准供应，保证出品质量。
2) Coordinate with Chopper 1 on the work arrangements and determine the normal job scopes. 协助制定砧板主管合理安排工作岗位，确定砧板的正常工作。
3) Responsible for cutting all kinds of ingredients and matching of ingredients for various dishes. Prepare the ingredients based on the number of pax. Preparing, processing, and cutting the daily supply of cooking ingredients.负责切配各种料头，并配合各类菜肴的原料，供应人头锅烹调，同时还要准备、加工、切配日常供应的烹调原料。
4) Responsible for training employees and familiar and know the food and hygiene policies. 负责对员工的培训，懂得食品卫生法。
5) Collect guest suggestions for dishes, constantly improve the taste of the dishes, the quality of the dishes. 收集客人对菜品的建议，不断改进菜品口味，菜品质量。
6) Implement the hygiene of the kitchen, ensure food hygiene, personal hygiene of employees, and environmental sanitation. Check whether the employees work accordingly to the operation specifications of the hygiene protocols. 落实厨房的卫生情况，保证食品卫生，员工个人卫生，环境卫生。检查下属员工是否按照操作规范工作，把好卫生质量关。
7) Check the operation of facilities and equipment, the use of kitchen utensils, and be responsible for the safety of facilities and equipment. 检查设施设备的运转情况，厨房用具的使用情况，并负责设施设备安全。
8) Check the use of the ingredients in the kitchen to ensure that all ingredients is stored when you leave, to prevent ingredients backlogs from exceeding the shelf life, to prevent deterioration or shortage, and to develop a monthly work plan. 检查厨房的原料的使用情况，确保在离开时所有的食品存放好，防止物资积压超过保质期，防止变质或短缺，制定每月工作计划。
9) Ensure the staffs are strictly in accordance with the regulations and regularly inspect and maintain the facilities and equipment. Check gas switch, burner, fire equipment, fire prevention work. 督导下属严格按照规程操作，定期对设施设备检查，保养。检查天然气开关，炉头，消防设备，做好防火工作。
